Arugula, Pear, Pecan & Blue Cheese Salad

Ingredients

  • 6 cups arugula
  • 2 ripe pears (or granny smith apples)
  • 1/2 cup crumbled blue cheese
  • 1/2 cup pecan pieces toasted
  • 1/4 cup honey
  • 1/2 tsp dried mustard
  • 1 tsp kosher salt
  • 1 cup extra virgin olive oil
  • 1/4 tsp cayenne pepper

Directions

Wash and dry arugula. Place greens in large salad bowl. Slice pears and add to greens. Combine vinaigrette ingredients (honey, dry mustard, salt, olive oil, cayenne pepper)  and stir. Toss salad with vinaigrette. Top with pecans and blue cheese.
