Carrot Cookies

Preheat oven to 350. Cream butter until fluffy, add sugar gradually, beating well after each addition.  Mix in carrots, egg, vanilla, spices, and orange rind.  Sift flour with baking powder and salt and beat in gradually.  Drop from teaspoon 1-1/2" apart onto lightly greased baking sheet and bake 12-15 minutes until firm but not brown.  Let cool about 1 minute on baking sheets, then transfer to wire racks to cool.
