Hot and Sour Slaw

Recipe adapted from Vegetarian Planet cookbook by Phil and Meghan Barbato The original recipe calls for bok choy, napa cabbage, fennel, carrots and snow peas. Despite the original recipe, red and green cabbage work well if young and fresh.

Directions

Combine cabbage, pepper, and scallions in a large bowl.

Whisk remaining ingredients together, pour over veggies and toss.

Let chill in fridge for one hour. Adjust chile, sugar and salt to taste.

Will keep in fridge, if covered, for three days.
