Marinated French Salad

Ingredients

  • 1/3 cup rice vinegar
  • 1/4 cup olive oil
  • 1 tbsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 2 cloves garlic, minced
  • 8 ounces red potatoes, cooked and sliced
  • 1 ripe medium tomato, cut into thin wedges
  • 1 cup green beans, steamed and cut into 1 1/2 inch pieces
  • 1/4 cup sliced, pitted kalamata or black olives
  • 1/4 cup chopped red onion

Directions

In large bowl, combine vinegar, oil, mustard, salt, pepper, and garlic.  Add remaining ingredients and toss.  Cover and refrigerate 1 hour before serving.javascript:;
