1 1/2 lbs. zucchini
salt
2 T extra-virgin olive oil
1/2 C white wine vinegar
1/2 C sugar
1 pinch red pepper flakes
4 cloves thinly sliced garlic
4 T chopped fresh basil
4 T chopped fresh parsley
Wash & dry zucchini. Cut lengthwise, 1/3" thick. Place zucchini in colander, sprinkle with salt and set aside for 2 hours.
In a large saucepan, heat the olive oil over medium heat. Place the drained zucchini slices in the pan and cook gently until golden brown, about 3 minutes per side. Set aside.
In a saucepan, bring vinegar and sugar to a boil over light heat. Add a pinch of pepper flakes and a pinch of salt.
Place zucchini slices flat in a shallow bowl with garlic slices, basil and parsley sprinkled throughout. Add vinegar. Marinate about 24 hours.
