Ingredients
- 1 cantaloupe or honeydew, cut into 1" chunks
- 1 cup rice wine vinegar
- 1 cup sugar
- 1/2 cup Thai basil leaves
- 1/2 cup mint leaves
Directions
Combine all in a clean mason jar. Refrigerate at least 2 hours, preferably overnight. Great for under-ripe melons too!
