Heat 3 tablespoons of the olive oil in a large saucepan over medium heat, add the onions and garlic, and saute for 3 minutes. Add the peppers, eggplants, and zucchini; mix well and cook for 5 minutes or until the vegetables have gained a little color. Then add the tomatoes, 1 2/3 cups water, the oregano, marjoram, parsley, salt, and pepper; mix well and simmer gently over medium-low heat for 1 hour, stirring from time to time. Stir in the remaining 6 tablespoons olive oil and check the seasoning. Serve hot or at room temperature.
