Roasted Root Vegetables

Don’t be concerned if you only use some of the veggies mentioned - just use your favorites.

Ingredients

  • 1/3 cup extra virgin olive oil
  • 2 tbsps maple syrup
  • 1 garlic clove minced
  • 4 beets large, peeled & quartered
  • 2 potatoes yukon gold, cut into 1 “ cubes
  • 2 carrots peeled & cut diagonally
  • 2 parsnips diced
  • 1 sweet potato 1 large, cut into 1” cubes
  • 1 rutabaga cut into 1” pieces
  • 2 onions large, quartered
  • salt
  • pepper
  • 2 tbsps butter melted
  • 1/3 cup green onions chopped

Preheat oven 350 degrees

Combine oil, maple syrup & garlic.  Place all veggies in large plastic zip lock bag and toss with oil mixture.  Pour veggies into heavy rimmed baking sheet.  Sprinkle with salt & pepper to taste.  Roast until tender, about 1 – 1 ½ hours.  Remove from oven and drizzle with butter.  Sprinkle with chopped green onions.  Serve.
