Sicilian Stewed Vegetables

In 12 inch skillet, heat 1 tbsp olive oil over medium heat. Add fresh tomatoes and sundried tomatoes. Cook, stirring occasionally, for 10 minutes.

Add remaining 2 Tbsp olive oil. Then add onions, 2 Tbsp basil and garlic and cook, stirring, until veggies are tender (about 10 minutes).  Next, allow to heat up to a boil and stir in eggplant, potato, ¼ cup water, salt and black pepper.  Cover and simmer, stirring frequently, for 20 minutes.

Add  bell pepper, remaining 2 Tbsp basil and remaining ¼ cup water; cover and simmer, stirring frequently and adding more water if necessary, until veggies are tender (about 20 minutes).

Cover and let stand 10 minutes before serving.
